In which I find my energy… And get out of bed with the first alarm, without internal debate.
6:15A BREAKFAST – 3 eggs scrambled, sweet potato hash in coconut oil, kale and peppers, 1/2 avocado.
12:00P LUNCH – thyme roasted short ribs, sweet potatoes, rosemary roasted carrots and parsnips, and asparagus for good measure.
In case you didn’t know, the Ultimate Warrior of WWE fame — back when it was the WWF — passed away. His figurine joined me at lunch today in his honor.
(In related news, I know. I’m crazy.)
Also, I’m loving these short ribs, and am pretty sure they get better every day. Although today’s lunch felt a bit decadent since my whole30 buddy heated it up for me. The little things make you feel special.
7:00P DINNER – Artichoke Lemon Chicken Pasta. Another winner! I suppose 2 out of 3 new recipes this week isn’t so bad.
Another successful day, but more importantly as I said at the top, I definitely have more energy. This is not on the official timeline yet, but I’ve been experiencing most things on the timeline, but a bit out of whack. Pants were definitely tighter day 7 and 8, which coincidentally aligned with my cranky-ness. Maybe the energy is early? Hey, I’ll take it and hope it sticks around!
